Social science research

Has anyone here conducted survey based social science research involving gender?

Basically I need to design a survey into attitudes to the soundscape (based on my work on gender divisions in hearing). Without going too much into specifics here, has anyone got any guidance on how to get meaningful information from a survey about less tangible aspects of gender? For instance I could put perhaps a 7 point scale with masculine on one end and feminine on the other - but would people even understand? Would they get offended?

Yes, I know surveys are terrible for this but any guidance would be great. I'm so sick of forms where the only option for "gender" is "male or female". For a supposedly academically rigorous community, this kind of error is pretty common!
